Lent..... a special time of Prayer, Penance, Sacrifice and Good Works

On Ash Wednesday, we begin our Lenten journey with Christ’s Passion, Death, and Resurrection.

At the mass this morning, Fr. Rollie Agustin (St. Andrew's Cathedral, La Huerta Paranaque) reminded us that Lent is a special time of prayer, penance, sacrifice and good works in preparation of the celebration of Easter. During this season, people should take up the three traditional practices:

1. Pray - by prayer we acknowledge God's power and goodness, our own neediness and dependence. We should pray for all, without exception, in high or low station, for the just, for sinners, for infidels; for the dead as well as for the living; for enemies as well as for friends.

2. Fasting and Abstinence - it is the reduction of one's intake of food to one full meal a day. The purpose of fasting is spiritual focus, self discipline, imitation of Christ, and performing penance. Fasting may be accompanied by abstinence, like giving up an unhealthy or unnecessary habit and not eating meat specially every Friday.

3. Charity - means an unlimited loving-kindness toward all others. Charity has two parts: love of God and love of man, which includes both love of one's neighbor and one's self.

Weekend Eats: Callos (Ox Tripe Stew)

Callos, a legacy from the Spanish colonial era, this savory stew of ox tripe and leg is flavored with spicy chorizo de bilbao and traditionally served with olives. What makes callos special? Why is it different from other beef stews? Chorizo de bilbao is a major factor. chorizo bilbao is a spicy sausage packed in paprika flavored lard.

Tripe came from the Italian word “trippa” which is a type of offal from the stomachs of various animals such as the cows and pigs. The most common one used for cooking is the beef tripe and it is used in different countries such as France who have Andouille and Tripoux, Italy who have Trippa alla Romana, Greece who have Patsás, Germany with their Saure Kutteln and Philippines and Spain with their Callos. These are just some of the popular examples and definitely there will be a lot more from other countries. 

Callos

Ingredients:
1 kilo ox tripe, cut into strips

1 pc. ox leg, cut into medium dice 
3 tablespoons extra-virgin olive oil
2 tablespoons garlic, minced
2 pcs. white onion, minced

3/4 kilo potato, cut into small triangles and fried
2 pcs. red bell pepper, cut into strips
1/2 cup garbanzos
1/2 cup tomato paste

2 tablespoons Spanish paprika
3-4 pieces El Rey chorizo de bilbao, sliced
2 tablespoons Worcestershire sauce
2 teaspoons Tabasco 
salt and pepper to taste


  • Clean the ox tripe and ox leg, boil together and simmer for at least 3 hours or until tender. Reserve the broth. 
  • Sauté garlic and onions in olive oil. Add the fat of the chorizo to make it more flavorful. Then put in the paprika and let them sweat for a few seconds. 
  • Add all the meats including the chorizo, followed by tomato paste, Worcestershire sauce, and Tabasco. 
  • Pour in all the reserved broth. Add the bell pepper and garbanzos.  Simmer for 30 minutes until all flavors meld together. 
  • Lastly, add the potatoes and season with salt and freshly cracked black pepper. Serve hot.


This recipe is my mother in law's version, the only thing that I added here is the Spanish Paprika. The first time I tasted it, I really fell in love and I never forgotten the taste. I like this dish because of its texture. The extra tender tripe and fat from the ox feet literally melts in your mouth while the luscious taste of chorizo lingers around, inviting you to try more. 


TIP:  My mother in law recommends that you use MARCA EL REY CHORIZO DE BILBAO than the usual chorizos in can.

Whitney Houston..... The greatest voice of our time

I remember when I was still a kid, I used to sing my heart out to Whitney Houston's "Greatest Love of All". My dad was the one who taught me this song and he used to sing it with me in family gatherings. Then, way back in highschool, "Where do broken hearts go" was one of my favorite. Who will forget the songs "I Will Always Love You" and "I Wanna Run To You"? It was like a national anthem in 1992, these songs were heard in every singing auditions and contests as well. But no matter how others tried to imitate her, no one has been gifted with the voice as glorious as Whitney Houston's.


Whitney Elizabeth Houston (August 9, 1963- February 11, 2012)was born in Newark, New Jersey, to a musical family: she was the daughter of the gospel star Cissy Houston, a cousin of Dionne Warwick and goddaughter of Aretha Franklin. She began singing in her church choir at the age of 11, and as a young teenager occasionally performed at her mother's concerts. Her voice attracted attention, and when she was 15, she and Cissy sang backup on Chaka Khan's 1978 hit I'm Every Woman. She was one of the world's best selling music artists, having sold over 170 million albums, singles and videos worldwide.

Houston often gravitated to dramatic songs with lyrics about triumphing over the odds, and has been credited with inventing the "pop diva" genre that has inspired singers to the present day. She was also the first black woman to break through the colour bar at the all-important MTV, which beforetime had played white artists almost exclusively. The station's heavy rotation of her videos made her a familiar face to Middle America, and her mix of glamour, talent and approachability made her an aspirational figure for millions of teenage girls.


In 1992, she married ex-boy band member Bobby Brown, who came to be widely blamed for her downward spiral. The marriage produced her only child, Bobbi Kristina, but Brown was jealous of his wife's success and was emotionally abusive. Her drug use began around that time, and by 1996 she was a daily user. As the decade went on she was photographed looking dishevelled and frighteningly haggard. Even in a decade in which celebrities regularly suffered humiliating falls from grace, Houston's was shocking. Narcotics and her toxic relationship with Brown ravaged her looks and robbed her voice of its ability to soar. Her mother forced her into rehab in 2006, and the following year Houston divorced Brown.

Last autumn she returned to acting for a remake with the American Idol winner Jordin Sparks of the 1976 film Sparkle. Filming of the story was completed recently.

February 11, 2012, Houston was found dead in the bathtub of her hotel room in Los Angeles, where she had gone for Davis' pre-Grammy party. Los Angeles County Coroner officials confirmed that the singer did not die from drowning, but rather from what appears to be a combination of Xanax and other prescription drugs mixed with alcohol.


The "being" may have left us, but her spirit and voice is alive and well!

Every February 14, candy, flowers and gifts are exchanged between loved ones, all in the name of St. Valentine. But who is this mysterious saint, and where did these traditions come from?


We do know that February has long been celebrated as a month of romance, and that St. Valentine's Day, as we know it today, contains vestiges of both Christian and ancient Roman tradition. But who was Saint Valentine, and how did he become associated with this ancient rite? 


The Catholic Church recognizes at least three different saints named Valentine or Valentinus, all of whom were martyred. One legend contends that Valentine was a priest who served during the third century in Rome. When Emperor Claudius II decided that single men made better soldiers than those with wives and families, he outlawed marriage for young men. Valentine, realizing the injustice of the decree, defied Claudius and continued to perform marriages for young lovers in secret. When Valentine's actions were discovered, Claudius ordered that he be put to death. 

Other stories suggest that Valentine may have been killed for attempting to help Christians escape harsh Roman prisons, where they were often beaten and tortured. According to one legend, an imprisoned Valentine actually sent the first "valentine" greeting himself after he fell in love with a young girl--possibly his jailor's daughter--who visited him during his confinement. Before his death, it is alleged that he wrote her a letter signed "From your Valentine," an expression that is still in use today. Although the truth behind the Valentine legends is murky, the stories all emphasize his appeal as a sympathetic, heroic and--most importantly--romantic figure. 



Valentine greetings were popular as far back as the Middle Ages, though written Valentine's didn't begin to appear until after 1400. The oldest known valentine still in existence today was a poem written in 1415 by Charles, Duke of Orleans, to his wife while he was imprisoned in the Tower of London following his capture at the Battle of Agincourt. 


Valentine's Day began to be popularly celebrated around the 17th century. By the middle of the 18th, it was common for friends and lovers of all social classes to exchange small tokens of affection or handwritten notes, and by 1900 printed cards began to replace written letters due to improvements in printing technology. Ready-made cards were an easy way for people to express their emotions in a time when direct expression of one's feelings was discouraged. Cheaper postage rates also contributed to an increase in the popularity of sending Valentine's Day greetings.

We Play Hard, We Pray Hard: Our Lady of Guadalupe Minor Seminary

Seminaries or theological schools are specialized and live-in education institutions that train the future ministers, priests or rabbi. In the Philippines, most seminaries are Catholic seminaries mainly because large portions of the population of the country are Catholics. A good number of these schools accommodate those who desire to be inclined to religious activities or become priests.

Our Lady of Guadalupe Minor Seminary The seminary was a response for the need of the Archdiocese of Manila of a subordinate section of the San Carlos Major Seminary. The seminary aims to focus on the four aspects of the life of their seminarians: Spiritual - forms the seminarians to be holy and faithful in their prayer lives; Academic - develops in the seminarians an appreciation of learning as an integral part of human and vocational life; Community - building communities through interaction, communication and relationships; and Social - forming seminarians to be genuine servant leaders.

The nurturance of the seed of priestly vocation through a wholistic formation program rooted in the gospel values, centered on Christ, under the maternal guidance of the Blessed Virgin Mary actualized in a community of faith.

OBJECTIVES
  • To foster the growth of the seminarian into the fullness of Christ life through an integrated program that takes into account his physical affective, intellectual, socio-cultural and spiritual development.
  • To help the seminarian discern the state of life befitting his character and charism as a child of God.
  • To create an atmosphere conducive for the assimilation and deepening of values necessary for the formation of genuine servant-leaders.
  • To expose the seminarian to the ideals and demands of priesthood through a process conforming to his age and development.
  • To assist the seminarian in recognizing and responding to the initial signs of priestly vocation
  • To prepare the seminarian for major seminary formation.

Admission Policies and Procedures

Cognizant of the unique character and special role of the high school seminary, strict guidelines are enforced to ensure the candidates’ aptness, openness and responsiveness to the program of seminary formation.  Those to be considered must show adequate interest to priestly life, express proper motivation, manifest a positive mental state, project stable emotional disposition, and belong to a family with sound moral living and catholic background.
The following procedures for application shall be followed:

A.  Phase One:  Mental Ability and Personality Motivation Test
  • Before taking the written examination, the applicant for First Year or Second Year high school must submit to the Admission Office a photocopy of Form 138 (Report Card) of the previous or current school year.  He must at least possess an academic average of 83.
  • Three (3) recent 2x2 colored pictures
  • Registration is at 8:30 a.m. and examination starts at 9:00 a.m.  Applicants should bring their own pen and pencil.

  • Testing Dates:  (Pls. call the seminary for details)
  • An amount of P200.00 will be charged to the applicant as an examination fee.

  • Applicants must pass the cut-off score of the Mental Ability and Motivation Tests to be considered for the next stage of admission process

  • Results will be available one week after.

B.  Phase Two:  Interview of the Board of Admissions

  1. Before the interview, the applicant must submit the following documents to the Admission Office.

    A. Form 138 (Photocopy)
    B. Birth, Baptismal and Confirmation Certificates (Photocopy)
    C. Marriage Contract / Certificate of Marriage of the parents in the Catholic Church
    D. Medical Certificate
    E. A recommendation letter from his parish priest and his principal
    F. Letter of Recommendation from the diocese bishop (only for those who do not belong to the Archdiocese of Manila)
  1. Applicants and their parents will undergo the interview.
Those who pass are rendered qualified for the live-in screening.
  1. Results will be available one week after.

C.  Phase Three:  Live-in Screening

This is the final phase of the admission process.  The applicant must stay in the seminary over an indicated period of time to have an experience of regular seminary life.  Evaluation will focus on his participation and involvement on the different activities held.  His over-all performance and behavior will be the major basis for the applicant’s admission or non-admission.  The results will be available one week after.

D.  Phase Four:  Deliberation by the Board of Admissions and Formal Acceptance

The Admission Office issues out its official and final decision regarding an applicant through a letter addressed to the parents.  This document contains one of the following comments:  Admitted (A) or Not Admitted (NA).

Hypertension a.k.a the Silent Killer

I've heard in the news that Philippine doctors are alarmed by the increasing number of cases of heart attack, stroke, cancer, diabetes and chronic obstructive pulmonary diseases in the country. They said that the common culprits are tobacco use, unhealthy diet and physical activity.


High blood pressure, also known as hypertension, is often called the Silent Killer because many people are not aware that their blood pressure is too high. Many people with high blood pressure may not feel any symptoms and therefore not have their hypertension diagnosed and treated for many years. Hypertension is the leading cause of stroke and can cause severe damage to other organs – eyes, kidneys and the arteries that bring blood to the heart muscle (coronary arteries). 


Normal, or ideal, blood pressure is less than 120/80 mm Hg. Blood pressures of 120/80 – 140/90 are considered “prehypertension.” Blood pressures in this range do not necessarily require medication and many people in this category can bring their blood pressure down with lifestyle modification, such as losing weight and reducing salt intake.  People with cardiovascular risk factors, diabetes or kidney disease with blood pressure in this range often receive medications. 

If a person’s blood pressure is over 140/90 they are considered to have hypertension. A trial of lifestyle modifications can be considered although many patients will require medication along with lifestyle modification.  

There are two numbers in the blood pressure measurement. The first, or top number, is called the systolic blood pressure and represents the pressure in your arteries (the blood vessels that carry blood with oxygen from the heart to all parts of the body) when the heart contracts (beats) and pumps blood out of the heart and into the arteries.The second, or bottom, number is called the diastolic blood pressure and represents the pressure in your arteries while your heart relaxes between beats.  

Both numbers are important and elevation in one, or both, are considered when making the diagnosis of hypertension.

What Causes High Blood Pressure?

Many factors can contribute to developing high blood pressure. Some can be controlled, such as weight, eating too much salt, drinking too much alcohol, and lack of physical exercise. The exact role of stress is unclear but is felt to be a factor as well.

Those factors that cannot be controlled are heredity (the genetic predisposition to having high blood pressure), older age and race.There are secondary causes of hypertension such as endocrine problems that are much less common but are often considered in a young person or a person with very hard to control blood pressure.   

High Blood Pressure Symptoms

High Blood pressure usually causes no symptoms, that is why it is labeled as "the silent killer". Sometimes people with markedly elevated blood pressure may develop the following:

  • headache
  • dizziness
  • blurred vision
  • nausea and vomiting
  • chest pain and shortness of breath


How Is Hypertension Treated?

Lifestyle Modification
Changes in a person’s lifestyle can significantly lower blood pressure. Some people can lower pressure enough to where they do not need medications while with others the changes can reduce the amount of medications needed.  

Diet
For many, but not all people, reduction in sodium intake is very important.A special diet, that consists of fruits, vegetables, low- and non-fat dairy products, lean meats, fish, beans and nuts could help lower the blood pressure.

Exercise
Physical activity can be helpful in many ways.  Expending more energy results in weight loss but exercise is felt to lower blood pressure directly as well. Maintaining a healthy weight for one’s height will also reduce blood pressure


Medication
All people with hypertension should be treated with lifestyle modification; however, many will still need medication. There are several types or classes of blood pressure medications that work in different ways.


Research shows home blood pressure monitoring can be vital to reducing a patient’s risk of stroke, heart attack, heart failure or kidney failure. More than 50% of people with high blood pressure who monitor at home show an improvement in medication compliance and are quicker to take action.
